Broccoli Pesto Pasta

August 14, 2012 - seatatthetable 1 Comment

This was a surprisingly delicious dish.  It was even better the next day for lunch.  I’m a big fan of broccoli, so I loved this twist on pesto that uses cooked broccoli instead of an herb.  The lemon kicks this up a notch, adding a fresh, subtly tart note.  I highly recommend this! Pesto Ricotta Spread

After making pesto, I knew I wanted to include it in my sandwich.  We also had some ricotta, so I whipped up a quick spread.  This was absolutely delicious.  It’s a flavorful, nutritious spread, definitely adds something special to a sandwich. Packing lunches has been an interesting challenge.  I enjoy figuring out new and creative ways to make a healthy, quick, tasty lunch that doesn’t require refrigeration or heating. This week I took sandwiches for lunch.  An easy standby, sandwiches can have a lot of variety. Turkey, Cheese and Hummus Sandwich Sandwich bread Sliced Smoked TurkeyRead more

Basil Pesto

There are certain foods that just say “Summer” to me:  ice cream, corn on the cob, watermelon, and pesto (to name a few).  So despite not having a plan for what to do with some pesto, I knew I wanted to make some  before summer comes to an end.  So far I’ve added it toRead more

Italian Squash Quiche

August 8, 2012 - seatatthetable 1 Comment

My aunt and cousins have returned from Japan!  To help their transition home I made a quiche.  The girls really like quiche, so it’s a convenient anytime of day meal.  Since this was for kids I kept the flavors pretty mild. Granola

August 6, 2012 - seatatthetable 2 Comments

This is my grandma’s recipe.  Mom used to make it when we were little, but I hated it.  These days I’m making up for all the times I didn’t eat this granola as a child.  Can’t get enough!  So you might as well make a double recipe when you try it.  I’ve made a fewRead more

Blackberry Custard Pie

So with all the fun picking blackberries lately, we’ve had an abundance.  What to do with lots of fruit?  Make pie of course!  This is the recipe I usually use for rhubarb pie.  And obviously it’s easy as pie to make. Barley Power Salad

August 2, 2012 - seatatthetable 2 Comments

This is what I’ve been taking for lunch all week.  This salad has a lot of different tastes going on, which keeps me from getting bored.  I think you can also alter it a lot based on what you like and what you have around.  Switch the edamame for chickpeas, or cherries instead of theRead more

Swiss Chard and White Bean Pasta

August 1, 2012 - seatatthetable Leave a comment

So a while ago I made Rosemary and Garlic White Bean Dip and while I was making it I added WAY too much salt.  It was a humbling reminder to taste as you go and not to just blindly follow a recipe.  Fortunately, I had the sense to scoop out most of the dip, add aRead more
