Spring 2014 Recipe Round Up (A Seat at the Table)

We just got more snow on Monday, so I’m having a hard time believing that it’s officially spring.  So in an attempt to get into the season, here’s what I’m dreaming about making this spring.

Angel Food Cake with Whipped Cream and Berries – This light and refreshing cake is perfect way to display the first berries of spring.

Double Chocolate Raspberry Cupcakes – Chocolate and raspberries are the perfect combination.

Dutch Baby – A great light brunch option!

Fresh Strawberry Cupcakes (Gluten-free) – These are delicious and such a great way to display the amazing flavors of fresh strawberries.

Granola – The perfect accompaniment to fresh fruit and yogurt…there’s nothing quite like a breakfast parfait.

Rhubarb Custard Pie – This family favorite gets made every spring as soon as the stalks of rhubarb can be found.

Rhubarb Snacking Cake – A new favorite…Yay rhubarb!

Strawberry-Rhubarb Scones – Soft, delicate scones pairing rhubarb’s favorite partner in crime: strawberries.  Served with a bit of honey-butter…hello tea time.

Basil Chicken Salad – So fresh and light!

Black Bean and Corn Salsa – I’m so ready for some chips and salsa, a nice cold beverage and a bunch of friends.

Cabbage Salad with Thai Peanut Dressing – Yay salads!  I’m so ready for hearty, crunch salads!

Herbed Ricotta Tart – This fresh herb tart is such a great spring dinner.

Lemony Tuna Salad – Adding lemon to this tuna salad makes it so fresh and bright.

Lentil Spinach Cups – Light, portion-controlled, packed with iron and protein…a great spring lunch option.

Peanut Ginger Chicken with Mango Salsa – This has tons of flavor and goes so nicely with the fresh mango of spring.

Smoked Turkey and Cheese Brunch Torte – Perfect for brunch, lunch or dinner.  Definitely looking forward to trying different variations of this.

Spice-Rubbed Salmon with Avocado Salsa – This was so good.  It definitely makes eating two servings of fish a week an enjoyable nutritional guideline.

Springtime Chicken Soup – For these lingering cold days/nights, this soup will warm you, while reminding you that spring is just around the corner.

Strawberry Avocado Kale Salad – A great transition salad – hearty winter greens, buttery avocado, and bright strawberries.

Taco Salad – This might just be my favorite meal…if you forced me to pick.  Good year round, it’s especially great in these transitional seasons to still have something warm but not heavy.

Tofu Lettuce Wraps with Hoisin-Peanut Sauce – Lettuce wraps are a great light dinner option; with tofu, brown rice and veggies, these still fill you up.

Veggie Greek Yogurt Dip – I’m always looking to eat more vegetables and this dip is a tasty way to sneak them in.  So bright and flavorful.

Whole Wheat Hamburger Buns – I’m craving burgers, I’m so ready for some delicious grilled burgers on these soft hamburger buns.
