Spice-Rubbed Salmon with Avocado Salsa

This salmon is fantastic.  The spice rub is flavorful, but not overwhelming, and it’s paired with this amazing avocado salsa that’s super fresh and creamy.  Fish is always a great weeknight option because it cooks up so quickly.  So while this is easy enough for dinner on a weeknight, it’s also fancy enough to impress company.  I’ll definitely be making this again!  And I’ll probably be doubling the salsa to eat with a tortilla chips later, or with a spoon, so good!!

I served this with cilantro-lime rice and steamed broccoli, it was a fantastic meal.

Adapted from Laylita’s Recipes

  • 1 tsp salt
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 2 lbs salmon
  • 1 Tbsp olive oil

In a small bowl, whisk together spices.  Lightly grease salmon with olive oil and then season with spice mixture.  Cut salmon into 8 pieces and place on a foil lined baking sheet.

Preheat oven to 400°F.  Cook salmon about 8-12 minutes, or until salmon is flakey and cooked through.  Serve immediately with Avocado Salsa below.

Avocado SalsaSpice-Rubbed Salmon with Avocado Salsa (A Seat at the Table)

  • 2 ripe avocados, peeled, seeded and diced
  • 1 cup frozen corn, thawed
  • 1 large shallot, thinly sliced
  • 2 jalapeños, minced
  • 2 limes, juiced
  • 1 Tbsp olive oil
  • 1 bunch cilantro, chopped (about 1/4 cup)
  • 1/2 tsp salt

In a bowl, combine all ingredients and mix well.
