Cocktail Hour: Pimm’s Cup

Pimm's Cup (A Seat at the Table)

I’ve been living it up at the beach, and my favorite cocktail this week has been Pimm’s Pimm's Cup Cocktail (A Seat at the Table)Cup.  Pimm’s is a British liqueur based on gin, but with a spiced citrus flavor.  It’s a very unique taste and totally delicious and refreshing in this cocktail.  While I’ve kept things pretty simple, you can also upgrade this to a Pimm’s Royal Cup by using sparkling wine instead of ginger ale.

My favorite part of this cocktail is the cucumber.  Just one slice of cucumber adds a refreshing burst of flavor.  It totally makes this cocktail, so don’t leave it out…I served this drink to many a skeptic this week and they all loved it, so give it a try!
