I’ve been living it up at the beach, and my favorite cocktail this week has been Pimm’s Cup. Pimm’s is a British liqueur based on gin, but with a spiced citrus flavor. It’s a very unique taste and totally delicious and refreshing in this cocktail. While I’ve kept things pretty simple, you can also upgrade this to a Pimm’s Royal Cup by using sparkling wine instead of ginger ale.
My favorite part of this cocktail is the cucumber. Just one slice of cucumber adds a refreshing burst of flavor. It totally makes this cocktail, so don’t leave it out…I served this drink to many a skeptic this week and they all loved it, so give it a try!
Pimm’s Cup
Makes 1 cocktail
- Ice
- 1/4 lime, juiced
- 1/2″ slice of cucumber
- 1 oz Pimm’s No. 1
- Ginger ale
Fill a highball glass with ice. Add lime juice and cucumber. Pour in the Pimm’s, then top with ginger ale. Stir and serve.
