Nutty Banana Baked Oatmeal (A Seat at the Table)

It’s a bit of a scary time to be working in a nursing home. My facility is doing everything they can to minimize risks and ensure the safety of our residents while also preparing for things to get worse before they get better. So right now it’s mostly about breathing and doing what I can to feel in control in a very out-of-control world.

This Nutty Banana Baked Oatmeal was something I whipped together when I thought I was going to be going into work at 6am, and while happily my schedule changed, it’s great to have breakfast sorted. This was so easy to make. By the time the oven is preheated the mixture is already done, and with a short 20 minute bake this is definitely a recipe I’ll come back to time and again.

I made some tweaks to the original recipe. It called for coconut oil, but then the milk and eggs had to be at room temperature to keep the coconut oil from solidifying, so I skipped that fussiness and used canola oil. Then at the last minute I decided to add in some shredded coconut and flaxseed meal. The coconut adds great texture and the flaxseed meal adds a little dose of omegas.

Nutty Banana Baked Oatmeal

Serves 4-6

  • 1/2 cup pecans, toasted
  • 2 ripe bananas, mashed (about 1 cup)
  • 3/4 cup milk
  • 1/4 cup canola oil
  • 1/4 cup maple syrup
  • 2 eggs
  • 2 cups old fashioned oats
  • 2 Tbsp flaxseed meal (optional)
  • 1/4 cup shredded coconut (optional)
  • 1 1/2 tsp cinnamon
  • 1/4 tsp salt

Wash your hands with soap and water.
Preheat oven to 350°F. Pour pecans into your 8×8 pan and place in preheating oven, when the oven reaches temperature your pecans will be well toasted (or pull them out sooner if you can smell the delicious nuttiness).

While the oven is preheating, mix the bananas, milk, oil, syrup, eggs together in a large bowel. Mix in the oats, coconut, cinnamon, and salt.

Once the nuts are toasted give them a chop and add to the mixture. Grease the 8×8″ pan with cooking spray and pour in the batter. Bake for 20-25 minutes or until the center is set.
