Top 7 Posts of 2017 (A Seat at the Table)

As 2017 comes to a close, I thought I’d highlight a few of my favorite posts from 2017.  I hope this blog continues to provide inspiration for you in 2018!

To start things off, my most viewed post this year was a Life in Balance post on the movie Fed Up.  If you haven’t read it yet, check out my brief synopsis of the movie and some helpful tips for making small changes to improve your health.

This year I also started a new series of Cooking 101 posts.  My post on how to slice an apple was very popular and even inspired Dad to slice some apples!  I consider that to be quite the achievement!

Now for my favorite recipes of the year:

Black Bean Tortilla Soup!  A light, vegetarian soup that’s perfect for the topping-lover (here’s looking at you, Sister!).  This is just what January calls for, a comforting, easy, soup with all the fixings.

While these Broccoli Melts don’t look like much, they’re fantastic.  A great way to eat your greens and your grilled cheese, because life is about balance.

Are you still into bowl-meals?  Combining all your favorite vegetables, carbs, proteins and dressings in one easy bowl for a flavor and texture explosion?  Yeah, me too.  Add this Veggie Soba Bowl with Tofu to your rotation.  All the good things and no boring tofu thanks to a very flavorful marinade/dressing.

My favorite side-dish of 2017 is these Mustard-Crusted Potatoes.  They’re not overly mustardy, but have a delicious tanginess and a hint of brightness from the lemon.  If you haven’t tried them yet, they’re definitely a must-make.

My favorite dessert of 2017 (if I had to pick), would be Vietnamese Iced Coffee Ice Cream.  So creamy and delicious with a kick of coffee flavor.  It’s perfect (and even better because I can make it decaf and not be up all night!), a real crowd pleaser too!

  1. I have enjoyed your wonderful blog this year, Lauren! (I sure hope you got some hours credit for it. Whether or not, I give it an A+!). This list of your faves inspires me to use them.     1. Thanks, Grammy! I mostly just write it for myself, because at the very least I find it helpful to keep track of delicious meals I’ve made. But I’m so glad you find it helpful and inspiring! It’s always nice to hear that other people get use out of it too. I hope you like the broccoli melts, I’m thinking of making those again this week too.
