Feta Hummus Sandwich (A Seat at the Table)

This isn’t much of a recipe but I’ve been eating quite a few of these so I figured it was worth sharing.  It’s always nice to get a fresh take on what kind of sandwich to make.  I made this an open-face sandwich because I was eating at home.  I prefer the proportions of open-face sandwiches, but obviously if you need a real sandwich feel free to double this, or make it a wrap. This is a great vegetarian sandwich, but you could also add some chicken if you’d like.  Hummus provides the protein, feta and olives add some healthy fats, whole wheat bread adds fiber and carbohydrates for energy–everything you need for a satisfying lunch or light dinner.  I add alfalfa sprouts for a fun change, but spinach or arugula would also be great.  Serve this with a kale salad and I’d be in vegetarian lunch heaven.

Makes 1 open-face sandwich

  • 1 slice whole wheat bread
  • 1-2 Tbsp hummus (I use Sabra, but use your favorite brand or make your own)
  • 1 Tbsp crumbled feta (I highly recommend buying feta that comes in blocks in water, they last a really long time and taste so much fresher than pre-crumbled feta)
  • 4 Kalamata olives, pitted and roughly chopped (olive tapenade would also work)
  • 1/2 cup alfalfa sprouts (or spinach or arugula)

Toast your bread.  Then spread hummus on your toast and sprinkle with feta and olives.  Top with alfalfa sprouts.Feta and Hummus Sandwich (A Seat at the Table)
